The REX Zwilling RZ 45/114 SL 14 P30P is a high-performance combination cutter and grinder for butcher shops and production facilities that require maximum flexibility, high performance, and precise control in a single system. This model combines a modern 45-liter cutter with an integrated 114-liter grinder – ideal for structured production processes, short distances, and reproducible results.

All external surfaces are made of brushed stainless steel , and the cutter bowl is also made of stainless steel with a volume of 45 liters . Inside the cutter is a high-quality Düker SDU 6-knife system , which ensures clean cuts, stable emulsions, and consistent product quality – even with demanding recipes.

In terms of performance, the machine is powerful: The 11 kW main motor is controlled by a new 15 kW frequency converter (FC) and protected by a 35 A slow-blow fuse . Operation is via a front-mounted foil control panel with a potentiometer for stepless speed control . The cutter shaft is infinitely variable and reaches up to 5,000 rpm in forward operation . Mixing is also possible in both forward and reverse directions up to 500 rpm . Three bowl speeds are available for bowl operation.

For optimal process control, displays for cutterhead speed , bowl revolutions , and temperature are integrated. The machine also features bowl and temperature shut-off , which supports product quality, operational reliability, and reproducible processes. An emergency stop button and a noise-reducing cover increase safety and improve working conditions during daily operation.

The integrated grinder operates at one speed and is controlled by a contactor with motor protection . The grinder motor has a power output of 5.5 kW , is designed for 400 V , and is protected by a 25 A slow-blow fuse . Particularly high-quality features include the new stainless steel housing and worm gear , as well as the new aluminum handwheel – a clear advantage in terms of service life and handling.

The grinder comes with a complete 5-piece cutting set (stainless steel) , consisting of a pre-cutter with sliding bearing , 2 ring blades , perforated discs (3/5/8/13 mm) and 2 insert rings . This allows for flexible adjustment of the desired texture – from fine to coarse, depending on the product and application.
